Chili Sin Carne
This easy and delicious recipe for vegetarian chili is actually from my mom.
You can make it in advance and in large quantities.
Ingredients:
- One package of vegetarian minced meat. I usually go for the brand Tivall,
but you can choose whichever brand you like.
Of course, you can also use real meat or you can even use lentils instead. - 1 onion
- 1 garlic clove
- 1 can of tomato pieces
- 1 bell pepper. I prefer yellow bell peppers, but the color is up to you.
- 1 can of kidney beans
- 1 dash of cinnamon
- cayenne pepper to taste
- salt and pepper to taste
Heat up a pan or pot and add some olive oil.
Chop the onion and the bell pepper. Crush the garlic clove. Bake this for about 3 minutes.
Add the vegetarian minced meat and bake for a couple of minutes according to the package.
(If you are using lentils then cook them first and just add them with the rest).
Now you can add the kidney beans and the tomatoes.
Bring to a simmer and stir a couple of times for about 10-15 minutes.
You can add a bit of water if you do not like the consistency.
Now add the cinnamon, pepper, salt and cayenne pepper.
If you are happy with the flavor and the consistency then you can serve it.
This recipe is for two people.
You can serve it with (cauliflower) rice, quinoa, nachos, bread, guacamole, sour cream, grated cheese, etc.
I also love to add in pumpkin pieces, corn or put it on top of a sweet potato.
The options are endless.
