Pasta with Spinach and Pine Nuts

I'm sharing another filling and healthy recipe with you today.

Ingredients for two portions:

  • 200 g pasta (I chose whole wheat fusilli pasta)
  • 400 g frozen spinach
  • 1 onion
  • 1 garlic clove
  • 2 tablespoons pine nuts
  • 1 tablespoon olive oil 
  • Pepper and salt 


Boil some water in a large pot.

When the water is boiling you can add the pasta and cook it according to the instructions on the package. 

Heat up a pan without any oil. Now bake the pine nuts for about three minutes.

Watch out that they don't burn and keep stirring.

Take the pine nuts out of the pan and pour the oil in the same pan.

Chop the onion and garlic clove into small pieces.

Bake for about 3 minutes. 

In the mean while you can heat up the frozen spinach in the microwave for 5 minutes on 750 Watt.

Now add the spinach, pepper and salt. 

Strain the pasta when it's ready and add it to the pan with the spinach.

Now mix everything. Put the pasta on a plate and top it with the pine nuts. 

You can also add some grated cheese if you like.
