Side Dish: Healthier Vegan Potato Salad
Hi there! This healthy potato salad is a great dish to eat at a barbecue,
if you want something a bit healthier, which is not loaded with mayonnaise.
Ingredients for 2 portions:
- 450 g potato wedges
- One - two tablespoons unsweetened regular soy yogurt
- Parsley
- 1 tablespoon olive oil
- Pepper and salt
Instructions:
Heat up the olive oil in a pan and bake the potatoes for about 10 minutes.
Put the potatoes in a bowl and mix with the soy yogurt.
Add some parsley, pepper and salt to your preference.
You can eat the potato salad cold or warm.

(Btw the sauce in the picture below was also made
by mixing ketchup and soy yogurt instead of mayonnaise).
