Tortizza Bianca
Good day!
This title may require a bit of an explanation.
A tortizza is a pizza made with a tortilla wrap. It's very delicious, but lighter than regular pizza dough. For a pizza bianca you use mascarpone instead of tomato sauce, so it's a bit heavier in calories.
That's why I decided to use a tortilla as a crust instead of a real pizza crust.
Ingredients for 4 tortizzas:
- 4 tortilla wraps
- 1 large zucchini
- 4 tablespoons of mascarpone
- 60 g grated goat cheese
- 15 g pine nuts
- Optional: honey, Italian herbs
Instructions:
Preheat the oven to 200 °C.
Spread 1 tablespoon of mascarpone on each wrap. Slice the zucchini and divide the pieces over the 4 wraps.
Now add the grated goat cheese, pine nuts and the Italian herbs.
Place the 4 tortizzas on a baking sheet on a tray in the oven.
Take the pizzas out of the oven after 10 minutes.
Add some honey if you like.
Enjoy your tortizza bianca!
