Pasta Caprese
Hello!
Here's another simple and delicious recipe for you!
Ingredients for two big portions:
- 235 g uncooked pasta of choice (I used whole wheat spirelli)
- 3 tomatoes
- 125 g mozzarella
- 2-3 tbsp green pesto
- Couple of leaves of basil
- 1 tbsp olive oil
- Salt and pepper
Instructions:
Boil some water and add the pasta. Leave the pasta in the pot for as long as instructed on the package. Heat up a pan and add the olive oil. In the mean while you can dice your tomatoes and mozzarella into small pieces. Put the tomato pieces in the pan for about 3 minutes. When the pasta is ready, drain it and add it to the tomatoes. Now you can mix in the pesto and the mozzarella. Add salt and pepper if you want.
Put everything on a plate and garnish with some basil leaves.
