Veggie Burgers on Eggplant Buns
Hello!
This is an easy lunch or dinner recipe.
Feel free to add whatever you like to it,
such as sweet potato fries, cheese, more vegetables, etc.
This recipe can be vegan,
if you use a vegan burger and no cheese or vegan cheese.
Ingredients for two burgers:
- 1 large eggplant
- 2 small veggie burgers
(or you can do as I did and buy big ones and
cut some pieces of it to make it smaller)
Instructions:
Wash the eggplant and cut off the ends.
Now cut the eggplant in slices of about 1 cm.
Place everything on a grill (or pan or bbq)
until brown stripes start to appear and everything looks well done.
Place the burger between your eggplant "buns".
You can also add some cheese, tomato, lettuce, etc.
